Vinification Process Grapes were selected from our own vineyards and hand-harvested in the early monrning to preserve the aromas. Prior to fermentation. Maceration took place in the press for four hours. This was followed by fermentation with selected yeasts in stainless steel tanks at temperature of between 12ºC and 15ºC |  |
